Learn About Olive Oil

We use four varieties of olives for the production of our products: Arbequina, Cornicabra, Hojiblanca, and Picuda.

Arbequina

This variety has become widely adopted in recent years due to its easy mechanization. Its fruits are quite distinctive, being very small, round, and typically appearing in clusters. Its oil yield is average, though it is very consistent in terms of productivity.

Cornicabra

Predominantly grown in the central region of the Peninsula, it is characterized by its great adaptation to calcareous soils and adverse weather conditions. Its resistance to detachment is high, making mechanization difficult. The alternation of abundant harvests with sparse or no harvests (known as "veciaria") is notable, but in contrast, its oil yield is high.

Hojiblanca

Primarily cultivated in the provinces of Córdoba and Málaga, it can be used either for table olives or for making oil. It is undoubtedly the best adapted to calcareous soils and drought, although it is quite prone to "veciaria" (alternation of abundant and sparse harvests).

Picuda

Commonly found in the highland olive groves of the Córdoba province, often alternating with Hojiblanca. It exhibits great rusticity and high vigor. Its production is high, though it is also prone to "veciaria" (alternation of abundant and sparse harvests). Its resistance to detachment and sensitivity to tuberculosis make it a variety that is not widely spread.
